It's almost Halloween and you know what that means! We've been snacking on pumpkin flavored everything for a month now! Sick of it yet? Me neither.
I'm always looking for new snacks to make and luckily for me, my friends help out with quality assurance. They get yummy snacks and I can lower my pumpkin bite count to only 5-ish (it would be 20 if I was home alone). Win, win!
The filling is essentially pumpkin pie filling, and it's surrounded by a flaky, fluffy pie crust. Oh Heavens.
I use refrigerated pie crusts, so please don't think I'm good enough to make crust from scratch. Just making it easier for y'all, right??
Now be warned: These aren't the quickest snacks that you can make, but so worth it!
I like to take my time with these; I recommend a glass a wine, a great friend, and some good tunes!
Pumpkin time
Preheat oven to 350
Roll out two packages of refrigerated pie crusts on a parchment paper working area; I like the Pillsbury brand crusts. You should have 4 crusts.
Also, mix together your pumpkin pie filling in a small bowl -
- 1 cup canned pumpkin (Libby's)
- ½ cup brown sugar
- ½ teaspoon pumpkin pie spice
- 2 tablespoons maple syrup
Back to the crusts on your parchment paper-
Using any glass cup or small cookie cutter, cut out as many circles as you can. My circles were right at 3 inches diameter. Continue with all of the crusts.
I took all of my scraps, made a ball, and then rolled out for more dough. No waste!
Add a small dollop of filling in the center of half of the circles, leaving room on the outside. About a rounded teaspoon.
Top with another circle and then press the edges together with a fork. Continue until all of your bites have been formed. See the pics below if you can't follow my rambling instructions.
Are you finished with your first glass of wine? Get another!
Brush egg wash lightly on each pumpkin bite and then bake for 22-25 minutes or until lightly browned.
Let cool for 10-15 minutes and then drizzle with a delicioussss maple syrup glaze -
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 6-7 tablespoons maple syrup (depending on consistency)
Drizzle onto cooled bites and then let glaze dry for 15-20 minutes before serving.
Note: Don't be scared of the glaze, it's real sticky at first but it WILL dry! Just let it sit and try to not eat them.

Pumpkin Bites
For the Bites-
- 2 packages pie crust (4 crusts total, I used Pillsbury brand)
- 1 cup canned pumpkin (Libby's)
- ½ cup light brown sugar
- ½ teaspoon pumpkin pie spice
- 2 tablespoons maple syrup
- 1 egg + 1 tablespoon water, whisked (for egg wash)
For the glaze-
- 1 cup powdered sugar
- ½ teaspoon vanilla
- 6-8 tablespoons maple syrup (depending on consistency)
- Preheat oven to 350
- Let crusts sit outside of fridge for 15 minutes then roll out on parchment paper work area.
- Using a cookie cutter or a cup, cut 3 inch circles out of the crusts. I always take my scraps and make another crust to reduce waste
- Mix together pumpkin, brown sugar, pumpkin pie spice, and maple syrup in a bowl
- Add a small dollop of pumpkin filling mixture to half of the circles and cover with the other half. Make sure to not to use too much filling for each bite
- Seal edges with a fork and then brush lightly with egg wash
- Transfer to cookie sheets and bake for 22-25 minutes or until lightly browned
- Let cool for 10-15 minutes while mixing the glaze ingredients
- Drizzle glaze on the bites and let the glaze dry for 15-20 minutes
- Serve and enjoy!
