A simple recipe for your inevitable Taco Tuesday!
Guess what's on the same block at my workplace? CHIPOTLE and guess what's a block away? ILLEGAL PETE'S so good, so yum, so many burrito bowls.
My order is as follows: carnitas bowl with brown rice, black beans, veggies, medium salsa, and guacamole because it's worth the $1 extra.
But instead of paying $8 a meal, cheap Kait makes my own at home. I'll get to the rest of the ingredients soon, but for now- the rice.
You can make this with either brown or white rice but come on, white rice tastes better and it's prettier for pics so yeah.
Enough jibber jabber, let's make some rice
All you need to do is add the following to a small pot
- 2 cups chicken broth
- 1 cup Jasmine rice
- ½ teaspoon salt
- ¼ teaspoon cumin
Bring to a boil and then cover, turn fire to low and then simmer for 20 minutes.
Once the time is up, remove from heat and let sit for 10 minutes.
While the rice is cooking, chop up 2 tablespoons of cilantro and juice one medium sized lime.
Mix in the cilantro and lime juice once rice has been cooked and then serve immediately with taco cups or an enchirito!
Cilantro Lime Rice
- 2 cups chicken broth
- 1 cup Jasmine rice
- ½ teaspoon salt
- ¼ teaspoon cumin
- 2 tablespoons chopped cilantro
- 1 medium sized lime, juiced
- Combine first 4 ingredients in a small saucepan. Bring to boil and then turn fire to LOW and cover completely
- Let rice simmer for 20 minutes, then remove from heat and let sit for another 10 minutes.
- While the rice is cooking, chop 2 tablespoons cilantro and juice one medium sized lime.
- Once rice has been cooked, mix in the lime juice and cilantro and then serve warm!
