Either way, I'm proud of you because whole 30 works for some people and isn't helpful for others. Diets and meal plans just aren't a one-size-fits-all kind of thing, boo boo bear.
The reason I ask, is RX bars are one of the few packaged foods that are allowed on whole 30.
If you're not familiar, with this 30 day meal plan you cannot have grains, sugar, beans or legumes, dairy, soy, alcohol, annnd I'm sure I'm missing something else.
The kicker for me is sugar because I'm a huuuuuge sugar fiend
These bars are made with just 3 ingredients, plus any extra flavors you want to add. They come together in a food processor and there is no baking involved!
These are quick and easy, sweet from dates, and filling from your favorite nuts.
Save some money by making these yourself and not spending $2.50 on a tiny bar!
Homemade RX Bars
- 1 cup nuts of choice (I like ½ almonds and peanuts)*
- 16-18 pitted dates (about 6 ounces), soaked in hot water for 5 minutes, then placed on paper towels to remove excess water**
- ½ cup egg white protein powder
- ½ tablespoon water (if needed)
- Optional add ins: ½ teaspoon cinnamon or 3 tablespoons unsweetened cocoa powder
- Add nuts to a food processor and pulse for 30 seconds for larger pieces or a minute for tiny pieces (I rather a minute)
- Add dates and pulse for another 10-20 seconds
- Add egg white protein powder and pulse for another 10-20 seconds
- Add water if necessary and pulse for a few more seconds until the mixture is crumbly, but can stick together when pressed.
- Lay parchment paper into a loaf pan (9x5)*** and press mixture into the pan. Using another sheet of parchment paper to press into the pan makes it easier
- Let harden in freezer for 30 minutes and then slice into 8 squares. This will be similar size/weight to RX bars.
- Package into separate bars in freezer paper and store in freezer until enjoyed. These can last 2 months in the freezer, but mine never last more than 2 weeks 😁
*I am not participating in whole 30 therefore I use peanuts. They are NOT allowed on the plan!
** In other recipes that I found, it was listed that you MUST use Medjool dates. I tried these and regular Deglet Noor dates and couldn't notice that big of a difference. Medjool are more expensive, so pick your poison.
*** You can also use an 8x8 pan for thinner bars, but I rather the loaf pan!

I was looking into the whole30 too and I just couldn’t do it. I’m like you; sugar has its grip on me and won’t let go. I love a yummy no bake recipe.

Costco sells ditted Medjool dates in a bag and cost less than $10. I usually can make 3-4 recipes out of one bag of these dates. They usually aren’t in the produce section.
