It's almost summer! You may be in the gym or just doing 10 squats before bed hoping for a Beyonce tush. Either way, it never hurts to have some healthy recipes that are actually really freaking tasty in your back pocket.
I'm a big sweet potato fan. I love the natural sweetness and how versatile this orange starch can be.
Ohhhh, now I'm reminded of sweet potato breakfast bowls and I'm fa sho going to post one soon. Don't say ew, it's actually really good!
These are easy, can be customized, and are a perfect side dish to your lean protein or just a great snack!
Most smashed potato recipes calls for baking the potatoes, smashing, and returning to the oven. I like to boil my potatoes first, and then bake. Boiling makes them tender and creamy and which contrasts the crispy outer edge that comes from baking!
I'm also snacking on them while writing this so... yeah, they are amaze.
I didn't want to add too much to these because honestly, I don't think it needs much. But I'm always down for butter (cause I'm from Louisiana) and coarse salt and fresh ground pepper always bring dishes to the next level.
And parmesan because, cheese.

Smashed Parm Sweet Potatoes
- 2 sweet potatoes
- ½ teaspoon salt
- 2 tablespoons melted salted butter or margarine
- 1 teaspoon coarse sea salt (or more to taste)
- Freshly ground black pepper
- Parmesan cheese
- Freshly chopped parsley
- Chop potatoes into around 1 inch thick rounds (see below picture for reference)
- Bring large saucepan of water to boil and season water with ½ teaspoon salt. Boil potatoes for 15-20 minutes or until fork tender
- Drain potatoes and then add to greased baking sheet
- Preheat oven to 375
- Using a fork, smash potatoes, but be careful! they are tender! (see below picture for reference)
- Drizzle melted butter amongst all of the sweet potato rounds
- Sprinkle with coarse sea salt and black pepper (you can use red pepper flakes for extra spice)
- Bake for 15-20 minutes or until edges are starting to crisp.
- Remove from oven and sprinkle on Parmesan cheese to each round. Set your broil setting to high and broil for 3 minutes.
- Remove from oven and sprinkle freshly chopped parsley and serve!
