Anyone else a creamy salad dressing person? Yeah, I’m with you. Most of my favorite dressings (ranch) have sooo much fats (ranch) and buttermilk (ranch) and greatness (ranch). But this one- OMG it’s creamy and flavorful and has avocado in it so yep, it’s amazing.
This dressing uses plain Greek yogurt which provides protein and other stuff that healthy people love. It’s quick to whip up, uses fresh ingredients, and keeps in the fridge for 2 weeks!
To get started, chop up a bunch of cilantro, you’ll need 1/4 cup for this recipe. Take an avocado and cut that up as well.
Then in a blender or Magic Bullet cup (I’m obsessed) add in 1/4 cup of plain Greek yogurt- try to get non-fat. Add in the chopped avocado and cilantro. Then add juice of one small lime- about one tablespoon and 3 tablespoons of olive oil. Add 1 teaspoon minced garlic in a jar or one chopped clove. And top it off with 1/4 teaspoon of each salt and pepper, adding a little cayenne if you want some extra heat.
You’ll pulse this combination for a few seconds, but it will be very thick! Little by little add water to your blender- I end up using right around 1/3 cup.
Keep in an airtight container or several small containers for salads, dipping veggies, or topping on tacos! YUM!
- 1/4 cup chopped cilantro
- 1 avocado
- 1/4 cup non fat plain Greek yogurt
- 3 tablespoons olive oil
- Juice of 1 lime or 1 tbs
- 1 teaspoon minced garlic
- 1/4 tsp each salt and pepper
- Dash of cayenne
- 1/4-1/3 cup water
- Chop cilantro and avocado and add to blender.
- Add in rest of ingredients except water and pulse for a few seconds
- A few tablespoons at a time add in the water until the consistency desired
